Gaia is one of my favorite places for breakfast in Denver. Everything they serve is fresh and earth-friendly, and you dine in a cozy renovated Victorian home. I highly recommend the spinach, artichoke and Swiss crepe, and their french press coffee is a must. For lunch, every sandwich and salad I've tried has been excellent. The service is very friendly but relaxed, and there is often a short wait for a table. Overall, Gaia is a great choice for breakfast or lunch, especially if you appreciate fresh and healthy food.
